To be an apprentice in the Dumpling Workshop

On July 10, Ms Veronnique and Jean Pierre Thevenin, the fanciers of Chinese culture from France joined in the  interesting dumpling making lesson during their vacation in Hangzhou.

8:30 am, we headed for the cooking school which was opened to the public for learning
Chinese and western food. Nowadays, the cooking lesson is more and more popular among foreigners. Around 9:30 am, we arrived at the school and firstly met with the dumpling chef or “Shifu” who had been the Dim Sum Chef for over 20 years.





At the beginning, the chef made a short introduction about dumpling to helped them get a general idea. Generally speaking, the whole process consists of 4 courses, the dough making, wrapper making, stuffing making and dumpling making. Among all the courses, the wrapper making and dumpling making decided the shape.While the stuffing making directly affects the taste of dumpling. The criteria lies on the size, shape and taste. As to the apprentice, the wrapper making and stuffing making are the most important. Undoubtedly, woman has the talent to acquire the key points and the skills very soon. And man would take more time to practice.




In the whole morning, they practiced to work out a dumpling.This afternoon, they practiced to make it beautiful. They said it was pretty difficult than they imagined but anyhow they finally succeeded to make it. Both of them were happy with the lesson. They thought it was interesting and meaningful. And they said they will come back later this year again.

About Dumpling in China

Dumpling is one of most favorite traditional food among Chinese all over the country. It was said that dumpling was firstly created by the famous doctor Zhangzhongjing in Han Dynasty around 1800 years ago which was originally used as the treatment for fending off the cold in winter.It was popular in Northern China in the very beginning and then gradually spread into Southern China. Nowadays, it is a traditional food for the Spring Festival in Northern China(or Lunar New Year).Every family will make the dumpling and eat dumpling on the lunar New Year’s Eve.Dumpling is not only a kind of food but also the expression of love in the family.

Dumplings are cooked balls of dough. They are based on flour, potatoes or bread, and may
include meat, fish, vegetables, or sweets. They may be cooked by boiling, steaming,
simmering, frying, or baking. They may have a filling, or there may be other ingredients
mixed into the dough. Dumplings may be sweet or savory. They can be eaten by themselves, in soups or stews, with gravy, or in any other way. While some dumplings resemble solid water-boiled dough, such as gnocchi, others such as wontons resemble meatballs with a thin dough covering.
